Immediately start cooling the bird
Do not breast or gut your bird.
Place the whole bird in a plastic bag with the head under a wing.
Make sure that you start your cut well away from the brisket allowing plenty of uncut hide for your shoulder mount. Do not cut open the chest cavity.
Skinning the delicate head areas is best left to the taxidermist.
Take a good photo of your catch immediately.
Do not gut your fish.
Wrap it in a very wet towel and put it in a plastic bag, with all the fins flat against the fish body and freeze it.
